From Our Table to Yours: 2023 Blueberry Recipes

Fresh blueberries are one of the simple pleasures of summer. In honor of National Blueberry Day, we asked ACCESS PT staff to submit their best blueberry recipes, and we weren’t disappointed! All of the submissions looked delicious, so choosing winners was no easy task. Here are our three favorites:

Made with just three simple ingredients, these homemade Blueberry Popsicles are the perfect guilt-free summer treat!

No Bake Blueberry Pie

This pie is so delicious and you don’t need to use the oven…great for summer time.

Ingredients:

  • 1 single pie crust (regular cooked or graham cracker)
  • 3 pints of blueberries (~6 cups), DIVIDED (1 pint, 2 pints)
  • 1 cup sugar
  • 1/2 cup water
  • 4 tablespoons cornstarch
  • 1/4 cup water
  • 1/2 tsp lemon juice
  • pinch of salt

Instructions:

  1. Clean and remove stems from blueberries.
  2. Bring 1 pint of blueberries, sugar, and 1/2 cup of water to a boil.
  3. When the berries burst, stir the cornstarch into 1/4 cup of water, then add to the blueberry mixture. Stir until thickened, and remove from heat.
  4. Stir in lemon juice and pinch of salt. Set aside to cool a bit.
  5. Stir in remaining 2 pints of berries.
  6. Spoon into crust.
  7. Cool. Enjoy with family, friends, or hide out and eat it all yourself. 🙂
